Do admissions committees read individual letters that make up the committee letter?

I am asking because one of my letter writers is unable to write my letter because he just suffered a stroke. I now only have 3 letters for my premed committee which is enough to satisfy my premed committee's requirements, but will med schools look at individual letters that make up my committee letter and see that I only have three? Or does this not happen often? If so, will it adversely affect my application? I now only have a letter from one professor. The other two are from my work and research.
 
Thanks! Do you read individual letters that make up the committee letter? Do you think other schools might care that my committee letter was made from only three letters? I know most school's letter requirements are satisfied by a committee letter though.

Yes, I read them. Everyone evaluating the application reads them. If it satisfies your committee it satisfies the requirement.
