I worked in a dental clinic for ~3 years (every summer and winter break) , doing administrative work, shadowing, and preparing patient rooms, probably a total of ~1000 hours. Would this count towards clinical hours or be helpful in any way?
Do dental hours count for anything?

From what you've described this isn't an experience you'd list as Employment-Medical/Clinical on a med school application. That doesn't mean it doesn't add value to your application. And the fact that they invited you back for three years speaks well of you (if it wasn't a relative's practice). You may include shadowing of the dentist in the same space as your physician shadowing, but I suggest you not to include more hours than you list for the docs.
