Do excellent EC's really make an average candidate stand out?

There are a sea of 3.7 cGPA/ 31-33 MCATs out there. It seems to me that your ECs would be the final thing to make you stand out. Is this the case adcoms? If so what type of EC are you personally looking for to make a candidate stand out or at least beat out those with similar numbers(include duration of activity in your insight too).

I've seen applicants who have done two years of Peace Corps service get an interview that wouldn't have been granted for someone with the same record who had just graduated college & had no plans for the coming year.

Similar long-term, post-college service can be a plus.

Some other activities are available only to people with amazing skills/career changers (professional athletes, Olympic athletes, beauty pageant winners, published novelists, professional actors/musicians, military officers).
