I think even if you undergraduate GPA is low, if you did well in your post-bac, they will definitely take that into consideration. My best advice for you is to call them and speak with a counselor. Let them know your situation and see what they say. Your MCATs are OKAY for SGU. You GPA is a little bit low but like I said if you got a 3.8-4.0 in your post-bac then that should reflect your most current academic progress. A lot of schools want to see how you are currently doing. They can care less espeically if you improved your grades significantly.
One thing though...SGU has a 30% drop out rate. It very vigorous and intense just like any U.S. medical school. Actually a graduate doctor told me that it can be harder than some U.S. medical schools b/c they want to weed out anyone who won't make it and who won't pass the USMILE (I like to call it that). So you need to consider if you can handle the stress and intense workload even if you do get in. It would be really disappointing to get in and then not be able to finish.
