Do programs contact my reference provider?

Dilemma: this excellent 60ish dentist I worked with planned to retire next year but last month he lost his wife and decided to go to Athens, Greek for a half-year vacation...... He is an old-fashion guy and doesn't do emails. I have to set up his email account for PASS...... If the programs I apply to want to contact him then there is no way. But he is the one who knows my clinical skills best and will give me an excellent letter...... Should I still use his letter or not? Do programs call them up and talk to them? 😕
