My family and I are considering international travel this spring. I've been accepted to 5 MD schools so far, but I have yet to hear from a few of my "dream schools." Do schools typically continue to interview through late February/early March, or should I be safe to embark on 1.5 weeks of travel?

yes they do, but odds of getting in are slim. Often you're interviewing for the waitlist or they'll accept maybe one out of your whole group. You should still get a reasonable heads up though if that makes you feel better.

Where is the proof that supports late interviews = interviewing for waitlist?

I had three interviews in March when I applied. Three years ago now, yikes. (One school wasn’t rolling admissions)

While this is just my state school, other schools that do not have rolling admissions may have something similar: My state school does three interview blocks in October, December and January with a month to 2 months notice. They allot 1/3 of the acceptances to each of the different interview blocks. The blocks are just dedicated to 1) People who applied before July 1st 2) People who applied between July 1st and August 1st 3) people who applied after August 1st.

Granted, this is because of the 12 public undergrad institutions in the state, they know that 9 of them do not get out/release final transcripts until late June...

It may be different at other non-rolling admissions schools, but this has been the experience I have seen.

Piggy-backing onto this thread, because I still have not received a significant amount of IIs or rejections, and January is almost half finished. I do have 3 interviews set, so I'm not too worried, but I'm in the same boat about waiting to hear back from a few preferred schools.
If I were to get a late interview date, I suppose I'd still go, but it's disheartening to see that a positive interview might still only get me on the waitlist. 🙁

It's called freezing admissions. It's when schools reach a certain number of acceptances where they have filled their class. Obviously they don't want to accept more than they can, so they freeze admissions and WL or reject people that interview. 2 of the 8 schools that I applied to have already froze their admissions. They will accept people off the waitlist when seats open up. Definitely is not a rejection, but just remember you might have to wait for that acceptance!

My son interviewed in early Jan, and was waitlisted. I called the school and was informed their rate of full deposits received to assure acceptance had increased dramatically that year. He was accepted in March. So waitlist is not always a rejection. Good luck OP!
