When practicing suturing, it is best to simulate the real environment as close as possible. That means when you are finished suturing something, you should keep it away from your mouth.

on the other hand, if you stand by your sterile technique, then you should double down and eat it
 
I'd be careful because some suturing material is coated with stuff that you may not want to ingest. Given, it's likely a tiny amount so it probably won't make a difference but what is the marginal cost of another pig foot to you?
