Does # of grad courses matter?

I recently graduated and I'm currently doing research. Some schools I've been looking at have certain classes as "recommended" so I was thinking about taking them before I apply this upcoming cycle.

Does the # of grad courses I take this year matter? Suppose I take two grad courses this upcoming spring semester and get two As.. is that significantly different than taking 5 grad courses over a year?

My gpa undergrad GPA is a 3.4, would it be better to take undergrad courses instead of grad course?
I only have one pre-req less than a B.
