The course I am referring to is called "Human Evolution". Here is how my university describes it:

ANTH 1001 - Human Evolution (BIOL)
(4.0 cr; fall, spring, summer, every year)
From ancestors of chimpanzees and humans to origins of modern humans. Principles of evolutionary theory, behavioral biology, and comparative anatomy used to reconstruct the major events in human evolution and the behavior of ourselves and our ancestors.
It includes a lab. Would this count toward that gpa? Would this also fullfill one of the Biology prerequisites for medical school since it is also a "BIOL" course? I have already taken the general biology class, but would this complete the second course requirement some schools require? For instance, NYU requires this:
· General Biology- 1 year (including laboratory)

I just figured that since it has “BIOL” after the name it would count. Any help would be great. Thanks.

ummm seems pretty biological to me. You would probably want to check with your pre-med advisor to confirm (though they don't always know everything, either). Bc of the (BIOL) after the title, I have a feeling that they might have it listed under a bio section as well. Check, and if so, then to avoid any issues, register for it under BIOL. For med school, you need 2 years of bio. After your year of gen bio, it doesn't really matter what other ones you take. Though, I see that it looks like an intro level course. It might be more beneficial to you to take an upper level course. Or at least 200 level, IMO.
