I don't have any DO shadowing as of yet, but am planning to shadow a DO this month. Should I wait to submit my AAOCOMAS until I finish that shadowing? Or can I go ahead and submit it and then inform schools later on?

I would submit it now. I didnt shadow a DO, and I was fine.

Yes, apply asap and send DO letter to schools directly. It should be fine but your app should be verified asap. Add throw away ONE school and once verified add more schools and in the mean time you can shadow DO.
