Double Major or just take random classes that peak my interest?

okay so bottom line is: I have a LOT of extra time in my schedule. I could graduate early but I'd rather take an extra year to make myself more competitive for medical school applications. I am currently a B.S. Human Biology major with a minor in Business. Should I... 1.) Take on another major in Chemistry or 2.) Take courses in different colleges (arts, psychology, anthropology, etc.) ? I already know that double majoring would not make me more competitive in the application process, but taking on a double major would force me to take on more difficult and rigorous science courses (p-chem, inorganic, etc.) which I'm sure would appeal to admissions committee (given that I do well in them). I love science. Always have! So double majoring wouldn't just be for the "looks of having another major" but to expand my knowledge. On the other hand, I am also interested in taking classes other than science just to expand my educational horizon. I think it would be fun to get out of my science-y comfort zone and explore new knowledge.

SO, i guess my question is: which route would be better for medical school? Some people have told me double major would help prepare me for MCAT and might be able to prove that I can take on heavy science course loads and do well (maybe) but others have said that I should try new classes even if it doesn't get me a double major just to make myself appear well-rounded and open-minded come application time. What do you guys think??
 
Your major doesn’t matter. Kill the Prereqs, killthe MCAT, enjoy your extra time, take classes that interest you. Now is your last opportunity to take a class that interests you which is not somehow related to medicine.

Also: taking extra classes for MCAT prep beyond the prereqs, Cell/Mole, biochem, and psych are a waste of time. If you kill those classes, no one will care about your 3.7 in Pchem (no one gets a 4.0 in Pchem lol). That chemistry double major time would be better spent on practice questions and learning how to ‘read science’ which is 2/3 of the MCAT anyway
