Double-Spacing Essays?

For secondary essays that you either have to upload or snail mail, are people double- or single-spacing? It seems like it would be easier to read double spaced, but I'd hate to send a school multiple pages if they're only looking for one.

I always thought double spacing was for editing purposes, not reading.

I single-spaced everything in my apps last year.
