I'd like to dual major for my PhD degree. Is this common to do for MDPhD students? If we state this in our research interests essay, plans for PhD, and interviews, how will this be looked upon? Is it possible to design my own PhD curriculum where I plan to work in a collaboration of different Labs in order to finish my project.

Or can I major in one area and add a minor in a different biomedical field for my PhD? Is this common for MDPhDs? Again, I am not sure how this will be reflected upon adcoms......

People don’t typically “major” for their PHD. You choose a thesis project (which may or may not have multiple PIs, typicslly not but collaborations between labs are common in science even if you are only a member of one lab) and work in that lab until you meet the requirements for graduation and defend a doctoral dissertation. The nature of your work could be very niche...or highly interdisciplinary. The actual name of the field on your PhD is mostly irrelevant.
