This may be the stupid question of the day, but I've been googling the topic and haven't found an answer that makes me happy. Is it considered professional to reply to an e-mail from an admissions office with a simple "Dear...thank you very much for your quick response. Sincerely..." or is that considered to be implied, and a waste of admission's time and server space?

i'd say kiss all the ass you can, especially if the person you are emailing is one of the admission office secretaries. they can make your life a whole lot easier or miraculously lose your transcripts the day before the interview deadline. 😎

if it was a mass email that went out to all applicants, don't respond, that would be cheesy. but if it was a personal email to you, perhaps responding to a question you had or letting you know personally that you got an interview or your application is complete, then a simple one-liner like you were describing would be appropriate.
