I was just wondering if EC activities performed after submitting the application may count in any way. Is there anywhere in the application where I can mention that I will be doing research during the 2 semesters while I wait for my acceptance?

After you complete a significant EC (complete, not going to do...) you can include it in an update letter or include it in a letter of intent.

👍 Nowhere for it on AMCAS, although by the time secondaries and interviews start rolling out you might have a chance to talk about it.
