For example, if you worked full-time as an artist for Toys R US would you title it "Artist, Toys R Us" or "Artist (Full-Time), Toys R Us" or simply "Artist"?

Also, I started a business as a freshman. Not 100% sure how to categorize it but I was thinking "Paid Employment - Non-Medical". Thoughts? Also, who would my contact person be? I don't have any employees other than friends I have hired to help me out on a few occasions.

You can title the first however you want. There's really no need to write "full-time" in the title, as that will be conveyed by the hours/week and in the description if you want. Or you can just label it "Artist" and describe it in the description.

That classification sounds most fitting for your second activity. You can list yourself as a contact person. I'm sure you'll write something in the description that you started the business, so that should justify listing yourself as the contact.
