I know the formula is E=sigma/Eo, but what does sigma mean/stand for?

I don't have that equation anywhere. The ones I have in my notes are:

C = Q/V
C = E0 (A/d)
E = V/d

where C = capacitance in farads, Q = charge collected, V = voltage across plate, d = distance between plates, A = area of overlap plates, and E0 = permittivity of free space.
