Is there a difference between anterior posterior and dorsal-ventral in terms of embryology? (I believe they are interchangeable in adults)
 
Yes. You are kind of like a wild animal in the womb in the sense that you are not bipedal yet. Anterior is rostral while posterior is caudal.

Note also though that since the head is not staring at the sky, that the dv and ap axis for the brain are not interchaneable after the neural flexture as an adult.

There is a difference between the embryologic genes controlling A/P versus D/V patterning.

A/P by sonic hedgehog at the base of the limbs
D/V by Wnt-7 at apical ectodermal ridge
