This essay prompt is as follows:
When you have been faced with multiple demands (e.g., academics, extracurricular involvement, personal situations) how have you managed your priorities? How have you become better at this during your college years?

How do you interpret it? I'm having trouble interpreting this in any other way besides "learning to prioritize, better focus". Also the fact that this is something that I'm STILL continually struggling with. How do I answer this in a positive way while still being accurate?
 
I don't think this question really needs "interpreting" per se. Just answer the question as written. When there's a lot of stuff on your plate, how do you handle it all? As far as how to answer in a positive way while still being accurate, you've said that you continue to struggle, but have you made any improvement throughout your college years? If the answer is no, then there are bigger issues to discuss than one secondary prompt. If the answer is yes, it is not dishonest at all to talk about the ways you've improved without placing a heavy emphasis on the fact that you still struggle sometimes.
 
I mean look back and introspect on your experiences. Do you have a time when you had a ton to do (academically, personally + volunteer wise), got yourself together and did it? It's perfectly acceptable to conclude that this is a work in progress as well and that you are continuously adjusting to better become efficient and manage time well.
