When I send my evaluator a request what suggested due date do I indicate in order to get my application verified on time? Do these request get sent to my specific schools I am interested in applying to like where do these requests get sent to?
 
The completed evaluations are sent to your schools that you apply to. I’d give the evaluators a good amount of time to complete it (I gave mine 2 weeks), but just make sure you get it in by the deadline!

What deadline? Do I just choose which one of the completed evaluations I want sent to my school?
 
Most schools won’t look at your LORs until you turn in your secondaries, so whenever you foresee yourself turning in secondaries.

I’m taking MCAT July 20th so won’t know where exactly I will apply until I get my score back. Based on that what should I do?

You can send in secondaries as late as before Thanksgiving if you're a decent applicant, though the recommended time frame is August - October.

Someone correct me if I'm wrong, but I think you can submit your primary application (without MCAT scores) in order to get verified by AACOMAS. People do this by simply applying to a throwaway school. Then when you receive your scores in August, you can send your scores to the schools and apply right away.... or you can decide to wait until the next cycle to retake MCAT, avoid risk of being a reapplicant, and then give it your best shot for your target schools.

You don’t need them for verification, but you want them to be complete for when the school looks at your application, so I would get them in by August, but keep in mind if you give your evaluators a huge time line, they won’t feel pressed to turn it in and may just put it off or forget about it.
 
Personally, I'd go for 4 weeks. Not super tight, but forces them to get it in before the deep summer malaise sets in.
