Use all the free resources available to you from SDN: articles, guides, expert advising, forums discussions, and school research.
Vague activities with lengths of time mean nothing if you can't talk about them in a substantive way.

You've covered most of the bases (minus sufficient shadowing), but nothing really sticks out. You mentioned taking a gap year, why not do something interesting then?

In terms of checking off all the boxes, you've got most everything covered. Shadowing seems to be biggest area of weakness. See notes below:
Club on global health - do you have some kind of leadership here?
Hospital volunteering - is this experience helping you to expand working with different cultures?
Food consultant for cafeteria on campus - ??
Resident Assistant ??
Er Scribe - employment, check clinical experience, check
Gym employee ??
Research in psych - any pubs, or posters?
Shadowing - not enough. Find other fields too!
Bodybuilding - teamwork?
Tutoring kids - serving community, check

Not sure why you'd want to delete. Your question could help others as well and the info you gave is very generic. Please delete thread
This is also good advice.ECs do not have to be medical per se.....
