File format for surgery videos

What video format is best when storing DVDs of my surgeries to the hard drive? Suggestion on minimum resolution?
 
I use the highest definition option in iMovie, which is HD, but it depends on what you want to do. If you're just going to watch it on your computer, you don't need very high resolution and it's OK to save the room on your HD. However, if you plan on showing it in conferences where it will be projected, any decrease in resolution is very noticeable.
 
I use Roxio. When I pick the HD option, it takes so long... I think I've left a DVD running when I went to bed and it was still going in the morning. I was wondering if I was doing something wrong, or maybe it's time for a new laptop.
