My school interests have always been science oriented. I've always felt much more motivated about it than any kind of general education. Suffice to say, my science GPA is about 3.8, but I did fail my first English class, then re-took it and made an A after intensely trying to reevaluate my attitude.

Will the people behind the med school admission curtain be skeptical of my dedication if I finish undergrad with an sGPA of about 3.8 and cGPA around 3.6?

Ooh.. also, how would they feel about taking things like art history on a pass/no pass basis?

It is a rare but desirable thing for the BCPM GPA to be higher than the cGPA. Your cGPA is high enough that your poor grade will not adversely influence your application process by much (if at all) as you've redeemed the poor grade with a retake.

An occasional P/F class is fine. Don't do it too much, though.
