Fulfill Prereq next year?

Hey I was thinking about taking a math class next spring or summer to fulfill the math prereq at some schools. I already have AP credit for math, but if I want to apply to some UC schools and a few east coast schools, I need to have a 3rd math class. I'll probably have to list this as a "Future class." I graduated last year already and I probably won't take this class until next year. Is it possible to do this? Or would the schools be like "wtf" is this crap? haha
