I don't quite understand why we are subtracting original amount from the new amount and not vice versa..Please help! Thank you 🙂

i know that..i just want to understand WHY because i thought there is less water in the final

there is less water because water was lost and its asking how much the change was so it has to be negative since we lost water, not gained.

There is less water in the final therefore % change must be negative. It is like losing money in the casino, you lose money your percent change is negative because you have less money in your pocket.
