I am so confused as to why a cancer that follows Knudsen's 2 hit theory shows dominance in the pedigree, but recessive at the cellular level?

Not sure what you're refering to, but I know some cancer genetics are such that you inherit a bad gene and then (almost always) you get a second hit that leads to the disease. So technically you must have two bad genes to get the disease(auto recessive), but practically if you inherit one bad gene you have a 100% chance of getting said disease (appears dominant).
