Getting LOR's over email?

I am a "nontrad" applicant who graduated from university in 2012. Obviously, I would rather get my LORs in person. But that college is hundreds of miles away from where I am now. I would like to get letters from some of my old profs, particularly my PI who I did research with. Has anyone here been successful in using LORs obtained over email? How did you go about it?
 
If they remember you and you did well it shouldn't be a problem. If their memory is a bit foggy just send them some helpful info to assist in writing it. If you have no other options try to make that clear in a subtle way so that the professor doesn't feel like they can just ignore your emails (it has happened to me before, I had to email one of my professors twice telling him some BS that I had a conditional acceptance pending one more letter because he initially had no intention of responding until I put some pressure on him).
