I have an opportunity of taking one of these GIS courses for free before I graduate from college:
Fundamental GIS and ArcGIS Concepts
Cartography
Spatial Data Management and Production

GIS Analysis
ArcGIS Server
ArcGIS Customization and Programming
I want to go into global health and/or epidemiology. Does anyone have any suggestion as to what course will best prepare me to survive in a graduate level intro GIS class? Thanks!
 
Take the fundamental class, as it seems the only intro one on your list.

I am also interested in pursuing global health and/or epidemiology, and I signed up for my school's Intro to GIS course this semester because of this. It's OK. Like any class that involves an introduction to software, a self-motivated student could teach him or herself the same stuff for free in less time goofing around with the program and reading a manual.

I've been considering trying to finish my school's five-course graduate certificate in GIS before starting an MPH program, but I don't if it would be worth it to spend the time and the money rather than just getting comfortable with ArcGIS.
 
I use GIS very often in the Epi I do. Get your fundamentals down first and build a foundation for more ideas to be based on. These other courses will not make much sense if you do not have at least an idea of the concepts and nomenclature.

Some of these classes do not really apply to GIS in Epi like Cartography. Some of the other classes will depend on where you work and what you will be expected to with your GIS skills and Epi.
