How do you withdraw from schools that have accepted you months ago (and already received a deposit from you)? And do I get my money back?

Send them a nice letter stating your withdrawal. Make sure to put in a line about where they can deposit or send your $$$ back to you at, but don't outright demand it.

you can do what bluntman suggested or you can call your bank and cancel the check, i would go with the former advice though.
