In a normal healthy individual who eats 2 or 3 balanced meals {lets say the meals consist of chicken , white rice and a salad with oil and vinegar +H2O with each meal} per day no extra snacks. If you do a finger stick directly after the last meal how high should the glucose go approximately and roughly how long after this does the glucose return to between 70 -120 mg/dl [Non diabetic]

really shouldn't go up above 200mg/dl, but a better test is to make sure fasting glucose is less than 126...or just check an A1C would probably be most specific.
 
The blood sugar will rise probably above 200 for a brief period of time. 2 hours post prandial glucose should be less than 140. Anything between 140-200 is considered insulin resistant and anything above 200 is considered diabetic.
