There are a number of valid answers to this question. Some of the most pertinent ECs that most pre-meds seek out are clinical experiences (hospital volunteer work, doctor shadowing), research experience (mostly biomedical research), leadership experience, and altruistic experiences (such as volunteering to help the unfortunate/poor/elderly, etc.). However, these are the things that every pre-med tries to do, and only token amounts of each don't really amount to anything extremely valuable. Do something that you really enjoy, whether or not it relates to medicine, and stick with it.
For a chance to gain leadership experience in an important public health field, I suggest looking into Students for Organ Donation. Students have the opportunity to start chapters of Students for Organ Donation at their school with the purpose of educating the campus community on the need for organ donation.
