I'm in the same boat. Now that all my applications are in I am planning on taking Immunology through Berkeley Extension. I tried to sign up for the in person class about a year ago, but it got canceled. I'm about to sign up for the on-line version. Good Luck!

Colorado State has both a domestic animal anatomy and a histology course offered online. They're pretty neat, but you must be able to learn through text and pictures. I can help you find links if you're interested and can't find the courses.
