So I started out my college as an engineering major and now I have 5 credits that do not count toward my major (3 credits from a math class that is classified as a science.) Will these grades still count toward my overall and science GPA's when applying to schools as a bio major? Thanks

Adcoms will look at everything but considering you are an engineering major you are probably fine. However, if you are going to take classes to raise your GPA I recommend you take upper division bio courses.

Ok, but lets say that, hypothetically, I took a bunch of random easy science classes to increase my GPA. Wouldn't med schools look at that or no?
The course designations will be on the application transcript. If you take a normal progression of prerequisites and maybe some upper-level Bio, and then a bunch of Bio classes with low numbers, Survey courses, Intro classes, etc., of course it will be noticed.
