I would like to know what grades do adcoms want to see in a post-bacc program for dental school admissions?

I wouldn't go below a 3.5/3.6 in a postbacc or masters. The point of these is to essentially raise your GPA or show that you can handle upper division classes and if you show similar trends in grades as in the past or just fail to get good grades in upper division classes, it can be a red flag

Is a 3.8 in post bacc great? Will that guarantee you a seat in dental schools like UDM, MOSDOH, UNE, and Howard? What about UMKC?

That is superb. But nothing in dental school admissions is guaranteed. I have seen 3.8+ 23+ get rejected from those.
