I just wanted to know if anyone had received an interview even though they were missing a LOR
 
esp to school such as SCO, NOVA, UHCO, Western, MCPHS

Yes, I got an interview to Western with one of my letters missing. I had 3 LORS and I was waiting on my committee letter.
