Help building a school list that will accept an 8/2020 MCAT

I am most likely going to reapply in the coming cycle, but I don't want to retake the MCAT while working a full-time job and revising/rewriting application essays. MSAR says for a lot of schools that the oldest MCAT they accept is Jan 2021, but a lot of websites say "three years prior to application."
520 MCAT, 3.89 GPA, significant extracurriculars, minimal volunteering (trying to start ASAP), some research + fourth-name author on publication, 2+ years full-time clinical experience.

What schools would you recommend?
