I believe Americorps provides one-year experiences and allows the flexibility to attend interviews that you'd need.

The GI shadowing sounds pretty solid. If you could augment this with a day each with two other US specialists, one of which is primary care, you'd be fine.

If you continue the charity clinic activity for another year, you'd have well above average clinical experience of 2.5 years. The time in China augments this further.

The research activity sounds good. Any chance of getting your own project to work on over the next year to make it stronger?

You have a leadership activity for a semester. Will you continue with it? How many hours does it take per week? If not much, consider adding some nonmedical/noncampus weekly community service.

Overall, I think you're coming along nicely. Your GPA is very nice, so keep up the good work. Without an MCAT score, it's premature to speculate on schools you have a chance at. But if you have a dream school, research what they're looking for and get as close to that as you can.
