Any input on the school list would be great 🙂

You are competitive for all DO schools. You can delete V. Tech since they accept very few non residents with your stats. You could add these MD schools:
Vermont
Creighton
NOVA MD
Seton Hall
California University

I'm starting to focus on narrowing my DO list. Any recommendations on what would be a "safe(-ish)" number / mix of DO schools to apply to that isn't obnoxiously large?

From your current list of DO schools you could remove OUHCOM since they have a strong instate preference. Otherwise your DO list is fine. 10 schools from that list should be adequate but include UNECOM.
