Help with my school list + any other advice appreciated! MCAT 519 GPA 3.73, service-oriented

Missouri resident, ORM
MCAT 519, GPA 3.73 (both cGPA and sGPA about the same)

Brief overview of extracurriculars:
- 1800 hours clinical community service through AmeriCorps at homeless shelter/clinic (direct patient contact) -2nd gap year completing now
- 2000 hours paid clinical work at small surgery center/clinic (also direct patient contact, not administrative) - 1st gap year
- 250 nonclinical community service: diabetes screenings and education for low-income population in a non clinical setting
- 150 hours nonclinical community service through Habitat for Humanity
- 300 hours clinical community service - ER volunteering at hospital
- 500 hours neuroimaging research over one year with no publications, one poster presentation
- one summer doing medical anthropology research while walking 300 miles along El Camino de Santiago, Spain
- one semester as TA for cadaveric anatomy
- around 80 hours of shadowing including primary care, pediatrics, cardiology, psychiatry, emergency orthopedics, and opthalmology

As you can see, I'm not super strong on research and my extracurriculars tend to be more service-oriented. I'm trying to target schools that are also service-oriented. Please let me know if I missed any!

Also, is it okay to list my anthropology research as one of my most meaningful activities if I've never published anything or presented on it? I submitted a paper to my anthropology department that they posted for a while but that's it. I just felt I learned and grew a lot from it.
