You could try Dartmouth and Brown. Your URM status may help you. Are you fluent in Spanish ?

I understand it much better than I can speak it but I would not say I am fluent. I am indicating on secondaries that I am working on it and will be taking a medical Spanish course online and will be speaking with my parents who are fluent in Spanish more often.

That will help your chances. You could add some of the schools out west where there are significant Mexican American populations. Consider these:
Kaiser
USC Keck
UCLA
Arizona (Tucson and Phoenix)
Mayo (Arizona)
