I am going into the spring semester of my senior year of undergrad and do not have physics I or II. I have all other requirements and will be graduating with a B.A. in Biology and minor in Chemistry. Am I able to take physics I with lab now or over the summer and apply to med school without physics II? Or would it be best if I took physics I over the summer, physics II in the fall and then apply for January 2021 admission?

How do you plan to take the MCAT without any physics? Take a gap year and do a postbacc that includes physics, and take the MCAT only after you've finished your physics courses.

Also, there is no such thing as "January" admission - US medical schools only start in the fall.
 
Do you have an MCAT score? Did you take it without having a formal class?

I'd take both over the summer and then take a gap year to work, study the MCAT, and prep for the following medical school app cycle. As stated above, there are no spring admissions for medical school. Only for fall matriculation
 
You absolutely need physics to take the MCAT. Take a gap year.
