So I have shadowed at 4 different places but I also have several other important experiences so should I just "hightlight" the one or two I had the most hours at and use the other 4-5 highlights for other stuff?

I used one of my shadowing as the starred experience. Ive known the dentist for 10 years and he wrote a LOR for me too. If it's important to you star it I'd say

I made my starred experiences appear well-rounded. I only included one shadowing experience, then starred volunteering, leadership roles, research, etc.
