How can I make my application more competitive?

Non-traditional Asian female - I've been paying for college and living expenses myself which has made undergrad and ECs take a few extra years. I'll be taking the MCAT this summer after taking Kaplan's month long class. I welcome other suggestions for preparation methods. What kind of MCAT score will make my application competitive, given my other stats?

Biochemistry major
cGPA 3.55
sGPA 3.49
I'll be retaking biochemistry II this spring. I got a D last semester due to overextending myself. In addition to taking an academically rigorous full time course load as a commuter, I began the semester trying to work 30 hours a week. I've definitely learned my lesson.

ECs
250 hours as a medical assistant
460 hours as a medical scribe for an orthopedic surgeon
6 hours shadowing that surgeon
32 hours shadowing an internist in a hospital serving a marginalized population, mainly a low-income Spanish speaking population
100+ hours volunteering with a hospital system, split between their inpatient drug and alcohol rehab program, their emergency department and their employee gym
20 hours as a peer mentor for lgtbq teens and young adults struggling with mental health issues
150 hours as a research assistant in a community psychology lab studying health in medically undeserved inner city populations (this will most likely lead to a poster and paper authorship)
50+ hours teaching comprehensive sexual education to youth
15 hours volunteering at a food bank

I also have fairly significant work experience as a shift supervisor at Starbucks, a registered pharmacy technician and a barista at an upscale coffee shop. I've usually worked about 15-20 hours a week while in school and more during breaks.
 
Score 505 and you will go to a great school. Score 507 and you will nearly get your pick.
 
Study hard on the MCAT (Khan Academy is good, and free), maybe shadow a couple more physicians (possibly of different specialties), bring home those interviews that you will get, BOOM become Student Doctor aimtosneeze
