How confident can you be that you're most likely going to be accepted by a school if you were interviewed, your DAT AA is, say, three points above the average at the school, and your GPA is a bit higher than the average? Does dental admissions work like college admissions where sometimes you're just not a good fit for the dental school, not the type of person they were looking for even though your stats were spot-on? Are dental schools fickle that way?

Yes. Of course, stats help... but I have seen too many people with amazing stats get rejected in whilst people with low stats get in to believe any other way.
 
This is precisely the case. This is why dental schools have an interview process and (most) undergrads do not.
 
From what I've observed from this cycle, an interview can be responsible up to 20-25% of your admission chance/grade so to say. Maybe not all schools do this, but two schools I interviewed at admitted that they rank students after adding points from your interview. It's not all that surprising considering how many applicants they receive and interview.
