I usually took my eraser board and just wrote on it going down the board. I honestly wasn't concerned about its organization for the sciences, as I only used it for simple calculations. For PAT though, I made a chart with face-painted # on the top and made tally marks for each problem I encountered. This helped me answer the questions that followed each figure as I had the totals already for each cube (such as X amount of 3 sides painted, X of 4 sides painted, etc etc).

Other than that, you're allowed to switch your boards during your breaks on the real DAT exam. They have a front and back, with one side having a grid and the other just being blank. There's no "right" way to organize your board, it's whatever's most comfortable for you. You can organize your first set of boards during the 15-minute introduction to the DAT.
