I have two very supportive people I work under in my lab. One is the PI (I deal with him directly once in a while) and the other is a professor I work under (he started out as a postdoc). I used to say hi to them everyday when I went to lab. I haven't been recently (I'm afraid to bug them), which I guess is stupid, but in general I just feel that they are underappreciated. They are so helpful and supportive and my whole research career would be non-existent without them. They take me under their wing and mentor me for no pay, have patience with my obvious comparative ignorance and bear with me out of their good will and regard for me and my needs. How do you express appreciation to those who have mentored you?

Do you bake?
Perhaps a magic show?

No but seriously, I wouldn't worry about specifics unless there is something you know they would like. I got basketball tickets for a doctor I shadowed. Otherwise I think a verbal or written expression of your gratitude would be a good idea once you end up leaving the lab. Very thoughtful of you btw.
