Looks like I'm about to answer my own question.
I just did it, and this is how you do it...
send an interfolio confidential letter of recommendation request to your professor.
Once you receive the letters into your Interfolio account, go to AADSAS application and create a PAPER Matching form with your professor's name on it. Do not put your professors' email address on the matching form. Save the PDF. Print it out, fill it out, sign it and scan it into PDF.
Once you have the completed PDF of the matching form, upload it into Interfolio. This is how you do it: go to "upload a document", select "AADSAS Letter of Evaluation Form" as the document type, title it, select "electronic documents" and upload the file.
Now that you have the Letter and the matching form on your interfolio account, you need to deliver those documents to AADSAS: Go to "add delivery". Select the Matching form and the Evaluation form into the list of items to be delivered. Select your AADSAS ID (make sure to put in your AADSAS ID into your interfolio account if you haven't done so), put in AADSAS and the address (this is shown on the matching form), and check out.
