My plan this summer is to retake orgo 1 in a 6 week session, and try and volunteer for 10 hours a week. I only did poorly in because of a misunderstanding on the syllabus, otherwise I would have had a B in the class.

I did the math and I could get 160 hours this summer, maybe even more once the summer class is done with. I plan on shadowing once the class is done because I'll have more time in my schedule. So far my plan is for my summer schedule to look like this:

Sample Day
10-12: class
1-4: studying "window" or volunteering time
5-7: work
7-bedtime: dinner/working out/studying/chilling with friends

As of now it looks like I'll be working Monday, and Friday nights and Saturday.

I guess what I'm asking is if this sounds like a good plan or if I should just hold off on the volunteering until the class is done.

Unless you really have a hard time with organic chemistry or with school in general, your schedule seems totally doable. Though I recommend freeing up some more time around exams due to how condensed the class is. Regardless, if you put your mind into it, anything is possible.

Best of luck~
