i'm looking through various universities' career opportunities pages right now, and there are a handful of positions i'm interested in. i hope to get a research assistant job for my 2 gap years after i graduate this may. it's almost february now; is it too early to be applying if i'm starting in may/june?

No, you should be applying now. The timelines to fill those positions all vary. They could want to fill them within 2 weeks of today or within 3 months of today. Most of the time, you don't know their timeline until you apply and ask. But some of those positions may be low-yielding because they already know who they want to hire - they just have to put them on the websites in order to comply with labor laws. Apply broadly.
