How long does an MCAT score last at most schools?

I understand schools generally accept scores up to 2-3 years old. Have you encountered more schools that take MCATs up to 2 versus 3 years, or is it more of a 50/50?

Let's say I take it Spring 2019 and take a gap year. So now I'm applying in the 2020 cycle, 1 full year since I took the exam. If I don't get in that cycle, would I be looking at taking the MCAT again, or would I be able to hold onto it for most schools in the 2021 cycle (2 full years since the exam)?

You'd be fine 2 years after the exam. 3 years plus is where they require you to retake it.
 
Some 2 years before your application, so 3 years before matriculating. Others 3 years before your application. Best to do it within two years so you maximize your odds of getting in.
